7908’s signature cuisine is founded on the idea that there is an “elevated elegance” to Aspen, to its people, (both locals and visitors) and to the kind of experience they expect when going out for dinner.
It is a concept in which each ingredient considered, each step inherent to the preparation and execution of our food is constructed and delivered in a manner that goes “far beyond” the norm. Another way looking at the word “elevated”, besides the literal translation from which 7908 takes its name (Aspen’s elevation is 7,908 feet).
Before the backdrop of this gorgeous town, this beautiful space, complimented by the world’s most delicious wines and spirits, and the call of live music late into the night, Executive Chef Byron Gomez and his team, proudly serve their creations each evening with this idea of “elevated elegance” in mind. .
